the collection of milk for the production of cheese takes place daily; once selected, the milk is processed on the advice of Mr. Copelli.

Fior di loto is ready for consumption, no seasoning is needed.

LA CRESCENZA CAROLINA

Origin:

it is a cheese produced in the Lombardy Plain. It comes from a small dairy in the Cremona area where only selected Italian milk is used.

​

Product description: 

fresh and creamy cheese for the table, ideal for filling savory pies and focaccia, it can also be eaten with salad and seasonal vegetables. Sweet and delicate taste to match with our spicy mustard.

 

Special features / curiosity:

it has very ancient origins, which date back to the 13th century. Crescenza derives from the Lodi word "carsenza", meaning focaccia, because the same mold used to make bread was used for this cheese. It belongs to the Stracchini family, as it was produced when cows returned tired from the mountain pastures.

MASCARPONE ARTIGIANALE

Typology:

cow milk

 

Origin:

it is a typical cheese of some areas of Lombardy, in particular Lodi and Abbiategrasso.

​

Product description: 

it has the aspect of a soft cream, consistent, white-yellow color, with a very sweet taste, enriched by the taste of cream.

 

Special features / curiosity:

the name derives from the Lombard term mascharpa or mascarpia, which indicates ricotta chese or cream. According to some, the exact name of the product should rather be mascherpone, deriving from Cascina Mascherpa, an unidentified farmstead located at the border between the provinces of Milan and Pavia.

 

Seasoning:

the mascarpone is ready for consumption, no maturing is required.
