Description
Stracchino delle Valli Orobiche is a mountain cheese that tells an ancient story, born along the transhumance routes of the upper Bergamo valleys. Made from raw whole cow’s milk, freshly milked (“warm milk”), using a quick process that respects the quality of the raw material, it results in a soft and delicate paste. After steaming, salting and an ageing period of at least 20 days in humid environments, it develops a creamy texture and a flavour that evolves from sweet to delicately tangy.
Recognised as a Slow Food Presidia product of the Valli Orobiche, it preserves and carries forward a mountain cheesemaking tradition deeply rooted in the territory, artisanal know-how and the identity of this cheese.
