it is a DOP cheese originating in the province of Milan; Novara has become the main producer in the last century.
Product description:
it is a pasteurized milk cheese, straw-colored white, whose green streaks are due to the process of marbling, i.e. the formation of mold due to the addition of penicillium spores to the milk. The rind is hard, while the paste has a consistency ranging from soft to creamy. The taste is slightly spicy but tending to sweet.
Special features / curiosity: it takes its name from the homonymous town in Lombardy where it was born; it is a widespread popular belief that "regular consumers" of gorgonzola, besides being healthy, are also very long-lived.

Product description:the rind is absent in this cheese. The paste is soft and spreadable, white or straw-colored with the presence of mottled veins. The taste is sweet and creamy with aromatic hints, typical of gorgonzola.
Special features / curiosity:
it is a compound cheese, obtained by layering Gorgonzola DOP and mascarpone cheese.
Seasoning:
Farcito is ready for consumption, no seasoning is needed.
