PECORINO NEL FIENO

cheese produced in Tuscany in the Grosseto area.

 

Product description:

semi-aged cheese, with a compact pinstripe white paste, pasty, with a persistent taste.

 

Special features / curiosity:

the slow aging in caves on a bed of straw makes it unique.

PECORINO SCODELLATO

Origin:

cheese selected by Mr. Copelli in an artisan and historic cheese factory located in the Tuscan Maremma.

 

Product description:

pasteurized sheep's milk cheese, semi-hard, red in color in the crust, with a delicate, flavorful taste and fragrant aroma. Non-edible rind.

 

Special features / curiosity:

the term pecorino is a recent invention because until after World War II each area of Tuscany had its own cacio, with names that were often different from town to town, even though the procedures were very similar.

Origin:

cheese produced in Sardinia, in the area of Cagliari.

 

Product description:

semi-mature cheese with a straw-colored paste and a brown, ribbed rind.

 

Special features / curiosity:

it is a cheese with a strong taste, strongly aromatic with spicy notes.

 

Seasoning:

min 6 months up to one year
