PECORINO DI GROTTA

Origin:

cheese selected by Mr. Copelli in an artisan and historic cheese factory located in the Tuscan Maremma.

 

Product description:

pasteurized sheep's milk cheese, with a hard paste, brown in color in the crust, with a strong and fragrant flavor.  It is aged in caves. Non-edible rind. 

 

Special features / curiosity:

the term pecorino is a recent invention because until after World War II each area of Tuscany had its own cacio, with names that were often different from town to town, even though the procedures were very similar.

PECORINO DI PIENZA

Typology:

sheep milk

 

Origin:

cheese produced in Tuscany in the town of Pienza.

 

Product description:

semi-hard cheese with a sweet taste and persistent flavor.

 

Special features / curiosity:

produced with milk from sheep that live and graze in the municipality of Pienza.

min 50 days

180 days

PECORINO DOLCE

Typology:

sheep milk

 

Origin:

cheese produced in Tuscany in the Grosseto area.

 

Product description:

fresh, soft white cheese with a white rind.

 

Special features / curiosity:

it stands out for its sweet taste reminiscent of spring milk; it is perfect paired with our spicy Mantuan quince mostarda.
