PECORINO AFFINATO

Origin:

cheese selected by Mr. Copelli in an artisan and historical cheese factory located in the Tuscan Maremma.

 

Product description:

pasteurized sheep's milk cheese, semi-hard, red in color in the crust, with a delicate, flavorful taste and fragrant aroma. Non-edible rind. 

 

Special features / curiosity:

the term pecorino is a recent invention because until after World War II each area of Tuscany had its own cacio, with names that were often different from town to town, even though the procedures were very similar.

PECORINO CLASSICO

Typology:

sheep milk

 

Origin:

cheese produced in Tuscany in the Grosseto area.

 

Product description:

semi-mature cheese, treated on the surface with concentrated tomato and extra virgin olive oil. The paste is white, compact and crumbly.

 

Special features / curiosity:

characteristic pecorino of Tuscan cheese production with a strong and at the same time delicate taste.

PECORINO DELLO ZIO

Typology:

sheep milk

 

Origin:

cheese produced in Sardinia, in the area of Cagliari.

 

Product description:

semi-mature cheese with a medium consistency tending towards straw-coloured. The rind tends to brown as it matures.

 

Special features / curiosity:

the taste is a balance between sweet and salty; it acquires a spicy flavor as the seasoning continues. It is perfect combined with a fresh Custoza wine.

min 60 days up to one year
