Origin:

this cheese is born in the mountains of Trentino, from the milk of mountain goats.

 

Product description:

cylindrical cheese, with slightly convex sides. The rind is hard and smooth, 4 to 8 mm thick, red in color. The internal past is typically granular. The flavor is sweet, pleasant, not spicy, with the strong and aromatic taste typical of truffles.

 

Special features / curiosity:

it is a cheese that comes from the idea of Mr. Copelli to combine the fragrance of goat's milk with the Acqualagna truffle.

 

Seasoning:

at least 9 months

ROBIOLETTA DI CAPRA

Typology:

Origin:

cheese produced by a small family-run business located in the Verona area, at the foot of the Lessini Mountains.

 

Product description:

cheese obtainted from whole milk, with raw paste and short maturation. The flowered rind, white in color, is elastic. The texture is compact, ivory white in color. The taste is sweet,  slightly aromatic.

 

Special features / curiosity:

the sweet taste allows the matching with an excellent balsamic vinegar.

TOMA DI CAPRA

Typology:

goat milk

 

Origin:

cheese produced in France.

 

Product description:

semi-hard cheese, produced from pasteurized goat's milk. It is distinguished by its orange-red washed rind. Intense taste and sweet and delicate aroma.

 

Special features / curiosity:

Toma di capra goes perfectly with our spicy mustards.
