CACIOTTA DI CAPRA

Origin:

cheese produced by a small family-run business located in the Verona area, at the foot of the Lessini Mountains.

 

Product description:

soft, white-colored cheese with small holes. It has a white rind and a slightly aromatic flavor.

 

Special features / curiosity:

for the production of this cheese, the milk is collected daily, and after the necessary qualitative analysis, the milk is processed in the small dairy owned by the company. The milk is brought to the coagulation temperature in order to create the curd, which is then broken and reduced to the size of a hazelnut; it is then placed in perforated plastic baskets in order to drain the whey. Salting takes place the next day by immersion in brine.

CAPRINO IL MIRTO

cheese produced in the south of Sardinia..

 

Product description:

a cheese made from whole goat's milk, cylindrical in shape with a smooth, deep brown rind; the paste is white tending to pale yellow, soft with slight eye formation.

 

Special features / curiosity:

the milk comes exclusively from the herds of Gerrei, characterized by wild grazing, rich in spontaneous herbs that give the cheese that delicate and pleasant flavor that goes easily with any occasion.

CAPROTTO DELLA MAREMMA

Origin:

cheese produced in Tuscany in the Grosseto area.

 

Product description:

cheese produced with the milk of goats with a white coat, with a very white and chalky paste, refined in hay and field grasses.

 

Special features / curiosity:

the taste is intense and delicate and becomes excellent to the palate if consumed after 6 months of seasoning.
